THE WINE

Rooted in nature, poured with intention

A short list of old-world bottles and unexpected finds — Loire chenin, Jura savagnin, Mosel riesling with age — chosen to surprise, to complement, and to linger.

Eight by the glass, rewritten on the mirror whenever a case runs out. Ask Sanne what she opened tonight.

Small to share, or three per person if you skipped lunch. The kitchen sends them as they are ready.

Oxtail, twelve hours, mustard whipped with cream. Six for € 11.

Bread and cultured butter

Baked two doors down on the Bloemgracht. € 6, and you will want a second.

Cheese, three Dutch

Aged Gouda, a raw-milk Boerenkaas, one blue. Quince, walnut. € 17.

THE ROOM

A bruin café, reimagined in full bloom

Layered greens, warm wood, candlelight, and flowers in unexpected places — above the bar, along the beams, in a jam jar on the table by the window.

Thirty-four seats inside, eleven on the canal when the weather allows. Nothing here is loud except, occasionally, us.

The ivy room: deep green walls under trailing ivy, bentwood chairs, and a candle and jar of greenery on every table.

THE IVY ROOM · SIXTEEN SEATS

The back room, where the ivy was never pruned back and the lamps were never turned up.

The canal-side terrace at night, lanterns and string lights strung over wooden tables along the water.

ELEVEN ON THE CANAL

Outside from April, and later than you would think.

Lanterns come out at dusk. Blankets on the backs of the chairs, because this is Amsterdam and we are optimists.

THE FLOWERS

The bar is also, on Saturdays, a florist

Marijke walks to the Bloemenmarkt at six and returns with more than the room needs. What is left goes out on the counter, wrapped in paper, until it is gone — usually by nine.

Come early for the bar, late for the room.

Reservation requests go where your guests already are — how many, what time, and whether anyone is not drinking. The eight bar stools are never held. They are for whoever walks in.
