One question before you sit. Six of nine courses move. One menu, drawn from every corner of the country and built around a single question we ask before you sit down. Answer it honestly and the whole evening moves.
Dinner only · 28 seats · one sitting
Most Indian restaurants pick a coast and stay there. We cook from all of it — a Kerala prawn beside a Kashmiri lamb beside a dal that took two days — because the thing they share is not a region. It is heat, and how much of it you want.
So we ask. Every table, before anything is fired. Your answer changes six of the nine courses, and nobody at the table has to pretend.

Twenty years in other people’s kitchens before he opened a room with twenty-eight seats in it. He still comes to every table before the first course and asks the question himself — how much heat do you actually want, rather than how much you think you ought to.
The fourth course is the one he argued for. Nobody outside the northeast was putting axone on a tasting menu when he first tried, and he has long since stopped explaining it.
Six of the nine courses change at this setting. The dal, the opening cup and the dessert never move — heat was never the point of those three.
The dots on each card are that dish’s own heat, not the dial.
Rehearse the menu here. Ishaan will still ask when you sit; that answer is the one the kitchen follows.
Everyone starts within a half hour of everyone else, which is why the kitchen can cook nine courses five different ways without anything arriving cold. It also means the room fills once and stays. Nobody is rushed out for a second seating, because there isn’t one.

One night a week we light the fire in the middle of the room and lay a single table around it. The heat is set by whoever is standing over it, not by a dial — and you sit with whoever else booked. Two seats or ten; the table fills either way.

I set it to four out of bravado and they quietly brought me water without being asked. The lamb was worth it.

My mother does not eat chilli and I do. We sat at the same table and both ate the same nine courses. I have never seen that anywhere.

Twenty-eight seats, one sitting, everyone starting within a half hour.
How manyWhich nightOne sitting a night, twenty-eight seats — we hold nothing until we have written back.
Your message arrives filled in — the room, 2, at warm. We take requests up to thirty nights ahead, and nothing is held until someone writes back.

Kiln Yard is a cut-through, not a street. Come off the market road under the brick arch and keep going until the lanterns start — ours are the lit ones, past the painted wall. If you reach the corner you have gone twenty metres too far.
Level access through the yard gate — tell us when you write and we will meet you there and hold it open.
